Much Ado About Monday {No. 114}

Welcome to another Much Ado About Monday!
We can't wait to see what you have been up this past week.

Well, it was an extremely rainy week for us here in Houston. We had severe flooding around the city with schools being closed on Tuesday due to impassable roads, houses and cars flooding around the area, and several deaths reported due to the high rising water. Luckily none of us experienced any damage but our hearts and thoughts go out to those around the state of Texas who are dealing with the aftermath of this tragic flooding.

To ease my heavy heart this week, I turned to the wonderful projects you guys shared with us. Sometimes you just need to be reminded that there are still beautiful things around you, so I sincerely thank you for all the inspirational links you provided. They helped me get through a rough week and made me smile. :)

Our picks this week are:

Lydia's Pick: Floral Hudson Pants via Sews n Bows
Jamie's Pick: Outdoor Makeover Reveal via Making It In the Mountains
Jill's Pick: Vegetarian Easy Nachos Recipe via Atta Girl
Emily's Pick: Create Your Own Frozen Lemonade Bar via A Pretty Life

And our most popular link this week was 30 Things to Do With Kids this Summer via Formula Mom. Such fun and creative ideas! I can't wait to give them a try.

Zesty Avocado Ranch Dip {Recipe}

Hi y'all! I hope you are having a wonderful Cinco de Mayo. I just had to quickly share this great recipe that would be an awesome addition to any Cinco de Mayo dinner, whether it's for family taco night or a last minute party appetizer!

I came up with this recipe a month or so back, and since then, I keep it on hand like all of the time. Although it's quick and easy to whip up, it also stores very well in a sealed container in the fridge. That way I'm ready come Mexican food night, which occurs quite frequently in our house! I've used it as a dip for chips or chicken taquitos, sauce for tacos or quesadillas, and it's also fantastic as a salad dressing. The possibilities are endless, I'll leave that up to you!

The best part about this recipe is that it whips up in a few minutes. I use the Hidden Valley powdered ranch dressing from Costco and prepare it according the the dressing recipe on the side. It also works with sour cream if you're out of mayo. The longest part of the prep is blending the avocados with the immersion blender, which I'm sure it would help if you chopped them up a bit first.

May also marks the beginning of boat season which is one of my families favourite activities.
