Zesty Avocado Ranch Dip {Recipe}

Hi y'all! I hope you are having a wonderful Cinco de Mayo. I just had to quickly share this great recipe that would be an awesome addition to any Cinco de Mayo dinner, whether it's for family taco night or a last minute party appetizer! 


I came up with this recipe a month or so back, and since then, I keep it on hand like all of the time. Although it's quick and easy to whip up, it also stores very well in a sealed container in the fridge. That way I'm ready come Mexican food night, which occurs quite frequently in our house! I've used it as a dip for chips or chicken taquitos, sauce for tacos or quesadillas, and it's also fantastic as a salad dressing. The possibilities are endless, I'll leave that up to you!


The best part about this recipe is that it whips up in a few minutes. I use the Hidden Valley powdered ranch dressing from Costco and prepare it according the the dressing recipe on the side. It also works with sour cream if you're out of mayo. The longest part of the prep is blending the avocados with the immersion blender, which I'm sure it would help if you chopped them up a bit first.
