My most popular dish, which I've been making for years now, are Apple Pancakes. They're simple, filling and absolutely delicious!
I found this recipe about 8 years ago on allrecipes.com and after making a few small tweeks, I feel it has been perfected. Seriously, these are some of the best pancakes you will EVER eat! :)
To get started you'll need:
1/4 cup butter, melted
1 cup milk
1 whole Granny Smith apple, shredded
1 1/4 cups white flour
1 1/4 t baking powder
1 t cinnamon
1 T white sugar
First, preheat your oven to 225F. As my pancakes come off of the griddle, I like to place them on a tray in the oven to keep warm. Nobody likes a cold pancake! You should also heat up your griddle at this time.
If you have any "special kitchen helpers" running about, you may want to sit them down with a snack, so they aren't under foot. :)
Next, combine the butter, milk and egg in one bowl. In a separate bowl mix together the flour, baking powder, cinnamon and sugar.
Now it's time to shred your apple! I've used my trusty Hamilton Beach food chopper for years- it hasn't let me down yet! I slice up my apple, then place a few pieces in at a time. Since my machine is so small, it's much easier to shred in batches.
Once you've shredded all of the apple, add it to you bowl of wet ingredients. Pour the dry ingredients into that bowl and stir until ingredients are blended.
Pour batter onto hot griddle, 1/3 cupful at a time. Let it cook on each side for 2-3 minutes. They should be golden brown. Remove and place into warmed oven until ready to serve.
We had our pancakes with scrambled eggs, turkey sausage patties and fruit. It was delicious! The best part was that we had enough leftover for breakfast the next morning. :)
