Asian Summer Salad {Recipe}


We're always looking for new ways to change up our routine dinners. It feels like we have a few basic meals that I always turn to. So my new goal for our family meals is to try out at least one new recipe, or in this case, reintroduce an old favorite each week. Are you with me? 

This salad is a family favorite. It can be served as a side salad, or add grilled chicken for an entree. We love the mixture of the sesame ginger dressing, crunchy wontons, nuts, and fruit. It's the perfect ending to a hot summer day. I hope you enjoy it as much as we do. 

On to the recipe. 



Ingredients
-Spring Mix
-Mandarin Oranges (16 oz can drained)
-Pineapple Slices (20 oz can drained)
-Wonton Strips
-Sliced Almonds
-Sesame Ginger Salad Dressing




In a large bowl, toss together spring mix, oranges, and just enough sesame ginger dressing to get everything a little bit wet. Try not to go overboard with this one, or it will turn into a soggy mess! Add in a handful of wonton strips and a sprinkling of sliced almonds. Toss. 



Now here comes the fancy part: Arrange pineapple slices on chilled salad plate.



Remove bottom of small can.



Place can in center of plate. Fill to the top with salad. 



Compact salad so that it will be firm enough to hold shape. Slowly lift can up while pressing down salad.



And there you have it. Isn't it pretty? The best part: even the kids love this salad. It's so fresh and summery and makes a great pairing with some asian grilled chicken and jasmine rice.
